Iron pantry

I've vowed to try and waste little to no food before I move out of my place. This means getting creative & putting the imagination to work!

Tonight wasn't too bad.
I give you... Tostachos!!!!

Refried black beans
Shredded Mexican cheese
Sliced olives
Salsa
Shredded salad, er, lettuce I mean
All doused with a healthy coating of my favorite hot sauce, Tapatio!!!

Up, Up & Away...

I can't help it.  My hopes are up.  I'm not generally one to get my hopes too high, for fear of falling that much farther.  I rarely reveal my hopes to others, unless they're near and dear to my heart either.   But, this one, I've got my sights set on, and I can't wait to see where it takes me. 

I forget where I was at the time, I decided to be silly & daydreamy and search craigslist ads in other countries.  I remember I was on my cell phone, ok wait, I think it was Rock Bottom in downtown Portland. 

If you've ever searched for something  on Craigslist in a foreign country, then you know it's an American thing.  Unless you are a web cam porn star or an entreprenuer with deep pockets, that you'll likely never refill.  However, this particular day I saw an ad that caught my eye.  It was listed in Belize.  'Scuba Ambassador'.  It was very vague, but I responded anyway, offering to commute between islands.  Why the hell not.

Within an hour, they responded, asking me where I was and what I was looking for.  We corresponded via email for a couple of weeks, and had something in common.  I had plans to relocate, and he had clients on the island I was headed for.  His company handles PR for resorts whose main focus is scuba diving in paradise.  Oddly, this has become MY main focus as well...

Over the last few months, we've corresponded back and forth.  Today he asked me to call him.  His 'Ambassador' is leaving the island, and needs a replacement.  And here I sit; an opportunity of a lifetime.  Not the money, only part time, but the opportunity to meet people, photograph above and below the water, gain more dive experience, promote the island, and make a small means while doing so.  On the island I've fallen for.  <3 Roatan <3

The never ending list

The list of things to do keeps growing longer and longer, instead of the alternative.  With the list comes money; it seems like each item to check off the to do list has a price tag looming next to its pretty little check box.  I'm diligently working to prioritize what is a necessity, and what can perhaps wait until I return in December. 

Here's an idea of what's rollin around upstairs; If I get the Go Pro with dive housing from Ryan now, will I be able to make good use of it in the first 3 months?  If so, should I give up on the lense repair for the Nikon?  Should I keep the Nikon, or sell the Nikon?  Health insurance for emergencies out of the country is expensive.  Let's be rational here.  No time to skimp on expenses.  Emergency health care is IMPORTANT!  What am I going to do with all my 'stuff' I haven't sold or given away yet?  Rent a storage unit?  Impose on a family member to keep it in the precious garage/basement space?  hrmph.  Crap.  I'm going to a scuba diving mecca, and I have no gear.  I at least need fins and a mask, if nothing else.  Speaking of, does my shorty suit still fit?  Could I find someone to swap me for a full suit?  I want it for protection more than anything.  Where the heck am I going to pack a cull size westuit, fins and BC?  Which reminds me, I need to call that shipping company out of Houston, to get rates.  I read it would cost around $50-75, and takes about 2-3 weeks to arrive.  I think it's worth it... isn't it?  Speaking of worth it, I still haven't found an unlocked smartphone to take with me.  I think it would be a cost saving to buy one here, and a data plan down there.  But I'm not sure?  No one seems to be 100% certain on this topic.  I hope that renter calls back and decides to rent the condo.  And the detail shop calls back, and is willing to squeeze my car in so I can put it up for sale after Shanyn's wedding.  Speaking of the wedding, I need to order her flowers.  Better get on with this day!
